Our Restaurant at Eight North

Our restaurant was designed with the Calistoga community in mind—approachable and deeply connected to the region—while also offering visitors a way to experience the local spirit. 

The menu from Executive Chef Abby Burk is centered around a wood-fired grill, with cooking that's bold, ingredient-driven, and refined in its simplicity—featuring peak-season produce, classic flavor combinations, and select nods to the Lawers’ roots like fresh Alaskan seafood and Baked Alaska. The menu is designed to complement wine, and to showcase its versatility not only as a beverage, but also its culinary uses as an ingredient across a variety of dishes. The restaurant also highlights products from Napa Valley and beyond, including Lawer Estates olive oil and verjus, locally roasted coffee, and beer from nearby brewers. 

The restaurant's wine list is focused around well-established and up-and-coming producers from across Calistoga and the Napa Valley, celebrating the community of growers and makers who define the region’s distinctive terroir, craft, and spirit.

In the raised dining room, immersive digital screens bring the vineyards of Calistoga into the heart of downtown, with seasonal imagery and behind-the-scenes winemaking content chronicling the process from vine to glass.

Wine Tastings at Eight North

Eight North features a dedicated wine tasting area that showcases a rotating selection from across Calistoga and the Napa Valley, featuring both well-established and emerging local wineries. Tastings can be customized by the glass, through curated flights, or paired with seasonal dishes. Special flights explore the evolution of fermentation—offering the rare opportunity to taste the progression of the same vineyard’s grapes through verjus (unripened grape juice), juice, and finished wine. 

Our wine tasting area offers its own menu of shareable snacks and light bites, thoughtfully designed to pair with wines.
